Fruit (and Pimms) Porridge

Start your New Year with a healthy, tasty breakfast!

Fruit porridge is great when you have guests over because its easy to scale up, and as there is no milk it's ideal for vegans and people with lactose intolerance, while tasting a lot nicer than porridge made with just water.

For 1 person;

1/2 cup* porridge oats
1 cup apple juice

(optional)

A pinch of cinnamon
A pinch of ground mixed spice
1/4 cup sultanas
Brown sugar to taste

 and for that extra special touch:
1 desert spoon of Pimms No 3 ( Winter cup)

* I use a mug for a filling breakfast

Prep: 5 mins
Cooking: 2-3 mins (for 1 person)

1. Place all the ingredients into a pan and place over a medium high heat.

2. Stir constantly until the porridge starts to thicken, roughly 2 mins.

2a The porridge is ready when the trail left by the spoon just starts to refill with liquid on the bottom of that pan.

3. Serve and eat while hot, sprinkle with sugar if you like.

To scale up for more people simply keep the ratio of 2 liquid to 1 of oats, so for 2 people you would need 1 cup of oats and 2 cups of fruit juice.

Variations

This works well with leftover stewed fruit, for example apples, pears and soft fruit, just top up with water to make a cupful of liquid.

The heat will evaporate the alcohol from the Pimms if you decide to use it, to make a yummy winter warmer without starting your day a bit tipsy.
