Malt Banana Buns

Made up on the spot today to use up a very over-ripe banana; little fat-free buns!


1 over-ripe banana
1 teaspoon lemon juice
1 dessert spoon of malt extract
1 dessert spoon of golden syrup
1 handful of mixed dry fruit or sultanas
6 dessert spoons of self raising flour
a few drops of vanilla essence.

Pre-time: 10 mins
Cooking time: 20 mins

1. Pre-heat the over to 190°C
2. Mash the banana and lemon juice together
3. Add all of the wet ingredients and stir until well combined.
4. Sift in in the flour and stir in. The dough should be thick but spoon-able.
5. Pace a spoonful into a 6-hole bun/ cake tray ( greased if you don't have a non-stick one)
6. Cook in the middle of the oven for 20 mins, or until golden brown.
