Really Chocolaty Cocoa Nib Biscuits


I've had a pretty stressful week, so if like me you need a chocolate-hit, these biscuits have a lovely intense chocolate flavour.


1 cups self raising flour
1 cup fine oats (porridge oats or instant oats)
1/2 or 50g cup butter
1 desert spoon of malt extract
2 desert spoons of golden syrup
1 big teaspoon or 2 small teaspoons of good quality cocoa
1 desert spoon milk ( roughly)
1 handful of cocoa nibs*
few drops of vanilla essence


* these are sun-dried cocoa bean bits, they have an intense, fruity-chocolate taste, although they are quite bitter. If you don't have any cocoa nibs, or you don't like them, you could use chocolate dops/ chips instead.

Prep time: 10-15 min
Cooking time: 30 min

1. Pre-heat the oven to 200 deg C
2. Rub the butter  cocoa and flour together, until it is all mixed.
3. Add in all the other ingredients into a firm, non-sticky dough.
4. Roll the dough out on a floured surface and cut into biscuits ( or just divide the dough with a pallet knife by scoring it).
5. Place onto a greased baking tray and bake in the top of the oven for about 20-30 minutes, or until they are firm and golden brown.
