Here are some yummy super simple gingerbread biscuits to celebrate.
Prep time: 15 mins
Cooking time: 20 mins
150g self raising flour
25g butter
3 dessert spoons of golden syrup
2 table spoons of ginger nibbles (crystallised ginger, no chocolate coating, optional)
1 heaped teaspoon of ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon mixed spice
a few drops of vanilla essence
a little milk
Topping
60g icing sugar
a little water
I like my gingerbread really gingery, but if you don't like yours quite as strong, just add a little less.
I haven't added any sugar to this recipe, as in my original trial, it was a bit sweet with the syrup and vanilla essence. How ever if you don't have any syrup you could use normal sugar and just add in a little more milk to the dough. The finished biscuit will be a little drier but should still taste as good.
1. Pre-heat the oven to 180°C
2. Mix all of the dry ingredients in a bowl.
3. Rub in the butter into the mix to bread crumbs.
4. Add in the syrup and a little milk to the mix to form a soft, but not sticky dough.
5. Roll out the dough on a floured surface to about 5 mm (1/4 inch).
5.a Use a rabbit cookie cutter to cut out shapes, then add to a greased baking tray.
6. Bake in the middle of the oven for about 20 mins, or until the biscuits are a golden brown.
7. Place on a cooling rack and leave until cool (after all it does exactly what it says on the tin!)
8. Mix up the icing and add to the bunny biscuits, you can either using a piping bag or a spoon, then allow the icing to set.
9. I always make a spare 'testing' biscuit with the ends of the dough, if you've done this, ice it and enjoy with a cup of tea while the others are cooling/ setting.
