Shove Tuesday 2012- Pancakes!

Well tomorrow is Pancake Day in the UK so here is a classic World War II recipe for pancake mix :)

This recipe is taken from the Eating for Victory cook book. It's pretty foolproof but here are a couple of top tips for the perfect pancake:

  •  Make sure the pan is hot before you start.
  • Use a non-stick pan or a very-lighty greased skillet
  • Be patient! Pancakes won't flip if you're inpatient, wait until the batter is solid before trying to turn them, if you squash them with the  spatula the air under the cake should make farting noises :P
Prep time: 10 mins
Cooking time: 2-3 mins per side

Makes roughly 6-8 cakes.

4 ounces self raising flour
1 egg
about 1/2 pint ( or 300 ml) of milk

Classic Pancakes

1.Mix the flour and egg together.
2. Slowly add in the milk to make a thick batter, if the flour forms lumps; don't panic! Just stir like mad with a fork or whisk until they go. Slightly lumpy batter still makes good pancakes :)
3. pour a little into the hot frying pan and cook each side until golden brown.
4 Enjoy with yummy toppings like Nutella, lemon and sugar, jam or peanut butter

Cartoon Kirsty's Soufflé fluffy pancake method

1. Split the egg into yoke and white.
2. mix the yoke into the flour.
3. whip the egg into stiff peaks
4. fold the egg whites into the flour
5. add in the milk slowly.
6. pour a little into the hot frying pan and cook each side until golden brown.
7 Enjoy with yummy toppings as above.
