What-to-do-with-egg-whites fat-free chocolate cake

Chewy, chocolatey, fat-free heaven for a Friday! Also useful for using up spare egg whites.


2 egg whites
1 dessert spoon cocoa
3 dessert spoons of  caster sugar
6 dessert spoons of  self-raising flour
a few drops of vanilla essence
Icing sugar for decoration


Prep time- 5 mins
Cooking time - 20 mins


1. Pre-heat the oven to 160°C
2. Put all of the ingredients, other then the flour, into a mixing bowl and whisk.
3. When the ingredients have combined slowly sift in the flour until you get a stiff dropping texture.
4. Spoon the mixture into a ring cake tin and bake in the centre of the oven for 20 mins or until the cake has set.
5. Turn the cake out and decorate with water and sugar icing as it cools.

Variations

This cake would go well with cinnamon or a chocolate icing.
It is very sweet, so you could replace some of the sugar with flour, or add a tiny drop of lemon to the mix.
